It seems like Thanksgiving was only yesterday and now, boom, it’s December. I wanted to share with you what I made on Thanksgiving this year in case you are in need of some inspiration for the upcoming holidays, a family get together, or a nice Sunday dinner.
I didn’t do any appetizers because there were only two of us, but we did snack on cheese and crackers throughout the day. (we’re simple like that, ha)
Thanksgiving Menu 2018
I’ve never had macaroni and cheese as a holiday dish before (I know, I know) but per the boyfriend’s request, we made some. I followed the recipe exactly except I added some breadcrumbs and cheese on top before I put it in the oven. yum!
I wasn’t feeling mashed potatoes this year, but definitely still wanted potatoes — it’s my favorite food. So, I opted for some roasted red potatoes this year and OH. MY. GOSH. these potatoes were amazing! I didn’t really follow the recipe exactly on this one since the recipes serves 8, and that would be just a few too many potatoes for us. I opted for 24oz of red potatoes instead. For the herbs and garlic I also didn’t follow the measurements exactly, mainly just putting enough in the bowl to cover all the potatoes nicely. I will definitely be making these again and again.
Trying to find the perfect turkey recipe took me the longest. I wanted to make sure I found the right one, and I wanted to try something a bit different. Behold queen Ina Garten. She has a BOMB turkey breast recipe, and the moment I saw it I knew I had to make it. This turkey was the most flavorful, juiciest, and delicious turkey I have ever had. (sorry mom!) And the best part? It was easy to do. I made the boyfriend get his hands dirty and had him put the rub on the turkey because not a real fan of getting my hands all up in the turkey’s business. No thanks. I was worried when it came out of the oven that it was over cooked and would be dry because it looked that way, but I was wrong. The turkey almost fell off the bone it was so juicy.
The boyfriend doesn’t like pumpkin pie (don’t get me started) so I decided to make an apple crisp instead. I did however go to our local market’s bakery and grab a couple of pumpkin pie slices for myself. 😉 I’ve never made apple crisp before but this turned out AMAZING. So good in fact that I made one again this past weekend.
I didn’t take any photos while I was cooking simply because it was chaos in my kitchen, and I forgot. But, I do have a drool worthy photo of my plate.
Our original Christmas plans fell through so it looks like we’ll be in the city for the holidays. I am in need of some help for Christmas holiday food recipes. We’re planning on having ham as our main dish, but if you any side dishes that go well with ham, LET. ME. KNOW.
